Peach Melba recipe

The perfect marriage of peach, vanilla ice cream and raspberry sauce

When the famous chef Auguste Escoffier, of the Savoy, saw the Australian opera singer Dame Nellie Melba perform at Covent Garden in 1894, he was so impressed that he created peach Melba – a perfect marriage of peach, vanilla ice cream and raspberry sauce.

Ripe peaches just need blanching for this but you’ll have to poach them if they aren’t ripe – as is often the case with supermarket ones.

Cook time: 1-15 minutes, depending on your fruit
